Jacob Schaperow’s Famous Hamantaschen Recipe (MH Bethesda)
Ingredients:
1 cup sugar
1/3 cup butter/margarine
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1/4 cup milk
Poppyseed filling (or other hamentashen filling)
Method:
– Cream sugar and butter
– Add flour, baking powder, and salt
– Mix together with the egg, vanilla, and milk
– Chill dough in refrigerator for one hour
– Roll out dough to 1/4″ thick or thinner
– Use drinking glass to cut circular cookies
– Fill cookies with filling and fold into hamentashen shapes
– Bake at 350 F for 12 minutes. Be careful not to burn the bottoms.
Serena Deutch’s Grandma’s Best Hamantaschen Recipe (MH NoLa)
Ingredients:
-3 eggs
-1 cup sugar
-1 cup oil
-¼ cup of orange juice
-4 cups of flour
-2 tsps baking powder
-1 tsp salt
Method:
-Beat eggs, sugar and oil until thick
-Mix orange juice, flour, baking powder and salt in separate bowl
-Mix the two bowls together, and leave to chill for a few hours
-Grease pan and heat oven to 375 degrees
-Bake for 10-15 minutes until golden brown
Jess Moore’s Family Hamantaschen Recipe (MoHo Dallas)
Ingredients:
-1 stick of butter
-2 tbsp confectioners sugar
-2 egg yolks
-3 tbsp ice water
-1.5 cups of flour
-Apricot, poppyseed, prune, or any jam
Method:
-Cream butter and sugar together in large bowl
-Add egg yolks and continue to mix well
-Add ice water
-Gradually stir in flour until a ball of dough is formed
-Place dough in plastic wrap and refrigerate overnight
-Turn oven to 350 degrees
-Grease a cookie sheet with butter
-Divide dough in half
-Wrap extra half in plastic and put back in refrigerator until needed
-Roll out dough on clean lightly floured surface to ¼ inch thickness
-Cut it into two circles by using the top of a glass
-Place 1 tsp of jam in center of each circle and fold into three cornered cookies pressing the ends together
-Place on cookie sheet and bake 10-15 minutes
